Can I keep a second copy of my backup on a pen drive?

Yes — Settings → Backup / Export lets you set a second folder (a pen drive, an external drive, a synced folder). Every backup is copied there as well as kept locally. Nothing is ever read FROM that folder automatically, so it cannot be a way for one shop’s data to reach another install.
